Since at least the mid-1970s, the UP watering facility for those hogs was at Dry Lake, NV, about 30 miles north of Las Vegas.  Here, the CSLAZ has just left Dry Lake after watering the hogs:

Stock pens also would have been located in areas that didn't raise livestock as there was a legal requirement to unload, feed, water and rest livestock in transit.
As far as stockyards being a place were cattle are better off not being aware of the next step in their journey keep in mind the major stockyards were more than the final destination before the slaughterhouse. The Chicago stockyards in particular were a place were animals were sold and transported further east and to other points, or sold as breeding stock.
