The Sunshine gons are no longer available (I got the last 7 Martin cast), but I have heard rumors about them becoming available again from another source. I’m hoping the rumor is true, and that they will be available sooner than later.

The problem is going to be that you need the signature CB&Q composite 40’ gons and they are only available as resin kits.   The InterMountain USRA car is a good stand-in and they did have those cars, but they did not last into the late steam-diesel transition era.

Look at the Bulletin on Southern Illinois Coal Fields for ideas of what equipment mix you should be going for.

Another possibility are the ARA 3bay steel hoppers, of which both Bowser and Accurail make models decorated for CB&Q.
