Wooden grain doors were nailed across the openings. Then in the later years paper grain doors were developed that had straps(made by signode, I believe). Each elevator
Had stacks of the wood grain doors on hand.

Unloading was accomplished by knocking down the grain doors. At large terminals the cars could literally be turned(lifted) to dump the grain. At smaller operations good old muscle and a shovel did the job.

Grain doors accumulated at the terminals and were then shipped back in car as a load of  grain doors. 

Any box car that wasn't deemed dirty or contaminated could and would be pushed into grain service each fall. Every waycar had a supply of rags. These were often used on the 
Steel cars where they leaked and lots of them leaked.

Before the use of covered hoppers to haul grain, the CB&Q and other railroads used boxcars.  I want to modify a couple of my S scale boxcars for this purpose. Can someone tell me what was used inside the sliding doors to hold the grain in?  How were the boxcars emptied?  Any details or references would be most helpful.  Thank you.
