Well well..OX TAIL SOUP.    I very familiar with that delicacy, but I don't think I can ever recall seeing it in print.

Several years ago when our kids were still at home we "went together" with some friends and purchased a "beef"...each family got 1/2 of EVERYTHING  including the TAIIL...My late wife was a superb cook and delighted in trying NEW STUFF.   Well she made OTS and served it without any explanation as to what it was.   It was  as expected "really good" UNTIL when the kids found out what it was it produced the expected  OOOOOOO YUK.      

Well regardless it was very good and we continued to experience that delicacy over the years.

I have a book about the Diners on the Northern pacific, specifically,"Dining car Line to the Pacific", by William A. McKenzie, ISBN 0-87351-253-7. I regularly make most of the breakfast offering from that book. Over the years they have become family favorites. Even the grand kids love them. There are a good selection of recipes in this book and although I have made just about all of them, I am definitely a fan of Oxtail soup!, lol. There are also a good number of photographs of the interiors of Dining cars. All in all one of my most used books.
