In Bill's book, ILLINOIS, IOWA, MINNESOTA, NEBRASKA & WISCONSIN were renumbered (and apparently remodeled) to numbers 300-304 in 1902.  It indicates built by Pullman in 1902.  In Pullman's Lot list, Lot 2850 are Cafe Parlors built for the CB&Q, numbered 300-304.  I'll have to look further when possible to see if they are indicated as rebuilt.   Bill's list is really post 1922, and while it covers cars before that, some are either left off (unknown at the time, due to the fire) or otherwise missing.  So it is possible other dining cars, not making it to 1920, were built.   There are numerical gaps in the roster.  One interesting thing is that (according to Pullman records) 5 diners were built by Pullman, Bills lists 4 - no telling the name though. 

The interesting thing is this is only 3 years after being built and the train inaugurated, and 1 year after the diners were built (by Pullman). 

Wood cars could have very short lives (some had very long lifes, but more in the manner of Washington's Ax).  Rebuilding them from a composite configuration to a cafe-parlor likely just meant that was what was needed.   The D&RG purchased 10 similar cars from B&S (though these were composite in both senses of the word) and they were rebuilt in a relatively short time, most hanging around for over 40 years.

I think we (you &I) went around this last year.  The Pullman built cars were built in 1901.  That's 2-3 years after the PTT indicates diners.  We know from the other discussion on this era's cars (the one with the reference to Some Classic (or More Classic) Trains, the Pullman cars appeared to be for the route to Minn.   Their names seem to bear that out.  So what diners were built by Pullman in 1898 for use on the CB&Q?
