Three reasons:

1. Sprung trucks come in a very limited replica of prototypes. Most of 
the prototype trucks (see December Model Railroader article by Jeff 
Wilson for examples) are available in plastic.

2. The springs in most sprung trucks are oversized and/or not heavy 
enough to replicate the prototype.

3. Most of those cars shown on the Steam Cars Freight site have fine 
scale wheel sets which do not fit in the current metal sprung trucks. 
All metal wheel sets and all metal trucks also do not make a good 
combination for good operation.
