The Q, as with all RR's offering Dining Car Service, had cookbooks for
the guidance (& uniformity) of their cooks. I do not have one (would like
to!) but can share a recipe they thought highly enough of to put on a
Q-issued postcard twice (2 issues of same scenic series). As an aside these
cards are unique as have only seen one other RR put an actual dining car
recipe on a RR-issued postcard (the other being CP or CN, have here
somewhere!) Anyway, here's a simple, authentic Q recipe for "1000 Island
Dressing" (the p.c.'s are from the 20's with recipe superimposed on a dining
car interior - 1 card is duo-tone predominantly lavendar with some "gold",
the other full color; both are vertical format & are part of at least a 50
card series - may bring to Streator. Gerald Here it is, verbatim:
"This is one of the recipes which have made Burlington Dining Car Service
famous. If you will follow it carefully, you will have the finsst Thousand
Island Dressing in the world.
Thousand Island Dressing
Two cups oil, yolk of three eggs, one-half cup vinegar.
Make this carefully into a smooth and well-blended mayonnaise. It will
take fully one-half hour, but the success of the dressing depends on the
mayonnaise. Now stir in slowly one-half bottle chili sauce, until well
mixed with mayonnaise. Then chop together (very fine) one bunch chives,
three hard-boiled eggs, two pimentos, one-half green pepper. Add paprika
and salt to taste and mix well with mayonnaise.
This will make about one quart of dressing. It should be kept in a cool
place and covered when not in use. It will keep a long time."
