I found two pages of "CB&Q Dining Car Body and Details" in the  1895 Car Builders' Cyclopedia (Figures 474-478).
I don't know if these will help, but here they are.

I had already done several Google searches, without fining much (in general google wants to talk about the later stainless steel cars).  I did find a floor plan of a CB&Q dining car with similar dimensions in the 1906 Car Builder's Dictionary (figure 177 of the "General View"). That floor plan also appeared in John White's American Passenger Cars book. The floor plan doesn't show end platforms or enclosed vestibules (the other floor plans do) Cotton Belt records note the cars have vestibules (at least by 1911 when the railroad purchased them). I note that Henry Sessions, a manager with Pullman patented the cloth diaphragm in 1887.
 
There are minor differences between the two cars, mostly dimensions which differ by an inch or two, but one car  (September 1887) is noted as having two end doors (one each end) while the second has three end doors. The floor plan shows a car with two separate end doors on the kitchen end, one leading to the alley, the second to the kitchen. The first car has 10'6" wheel base trucks with 37" wheels. The second car has 11' wheel base trucks with 40 1/4" wheels. The (side) windows are "square body, sash double" The May 1887 car weighs 114,400 lbs, the September 1887 car weighs 116,100 lbs.
 
I am still looking for information and or drawings of cars.
