Bill,

Looking at the photo, the covered hopper is right next to the silos.  One of two things come to mind.  One, the hopper is at one of the grain facilities elsewhere in Omaha or it is at another Falstaff brewery such as St Louis and mislabled as Omaha.

Looking at the Sanborn Maps (which were updated through 1962 for Omaha), there are no silos at the brewery. There is a large grain elevator northwest of the brewery which is what suspect is in the image. It is a couple of blocks from the brewery.

In Burlington Bulletin #20 it shows a General American covered hoppers supposedly at the brewery with silos in the background. I have yet to find any pictures of the brewery with silos on the property. Were they tucked away on the northwest side? Or possibly the shot was at a nearby elevator that served the brewery?
