Hey, I can contribute to this conversation!  :)

Pretty easy, Pete. 

When you hit 'reply', your email program (regardless of type) should present you a window with the text of the previous email displayed.

Using your mouse, hold the pointer over the place you want to start deleting words (start at the top and work to the bottom).  Click on the left mouse button, and then drag down the page (without releasing the mouse) until you get to the point you want to stop, *then* release the mouse.  Do not click again until you complete the next step...which is hit the 'delete' key.  You should have erased all of the highlighted words.

I've attached a screenshot of what it looks like as you are highlighting the area to delete below...hopefully you can see it if you are not using the text messages.
