TELL TALE EXTRA: SEASONED EATINGS for FRED ERICKSON! (2011)
Tacoma's own Fred Erickson turns twenty-one for the sixty-third time on Monday,
we will start our seasoned eatings a wee bit early this year. I am in a
breakfast mood, so this year, in honor of Berlin's own Inez Fabiana Mischitz,
who reminds you all to ''Drink your Ovaltine!'' we will feature [Das] German
Pancake! [Ja! Ja!] According to Wlliam McKenzie's notes, [Das] German Pancake
''Looks and tastes delicious!''
[DAS] GERMAN PANCAKE
INGREDIENTS
Three eggs
One-half teaspoon of salt
One-half cup of all-purpose flour
One-half cup of milk
Two tablespoons of soft butter
DIRECTIONS
In a medium bowl, beat the eggs until very light with a rotary beater.
Add salt and flour, then milk, beating all the time.
Spread soft butter on the bottom and sides of a cold, ten-inch frying pan.
Pour in egg batter.
Bake twenty to twenty-five minutes in an oven pre-heated to 400 degrees,
gradually reducing the heat to 325 degrees.
The pancake should puff up at the sides and be crisp and brown.
Place on a hot platter, serve with powdered sugar and lemon juice.
Makes two servings.
