I'll take a stab at it.

They removed their caps because there was food on the table. Removing caps 
allowed them to shake off any cinders/dirt so it wouldn't get into passengers 
food as they walked by.

No food on the table, the caps stay on.

Could also be a "respect" thing. Grandma always said remove your cap son!
