Hence the designation between sour cream and fresh or sweet cream. Sour
cream came from the cans that were not refridgerated. In the early days milk
runs were not that long and creameries were close by. I beleive cans did not
sit on platfroms that long as schedules were known and farmers typically
dropped off cans just prior to train time.
