In normal yard usage "Trimming" is the process of cleaning
up a hump or flat yard after classification. In the case of
hump yards this is normally done by the hump engine. Cars
will get caught in retarders or not clear and tracks will
not be in one piece.

In any kind of yard there is always a trade off here in the
use of labor. If the classification tracks are not all coupled
up it takes longer to make up trains. On the other hand if the
crew that is doing the humping or classification spends too
much time trimming you are losing production at that end.

I can not recall ever hearing the expression "Trim Shack" used
but the mental picture I would draw would be a place for the
Switchmen to get out of the weather somewhere around the
crest of the hump or around the group retarders.

Can not envision any connection with switch lamps.

large yard?  Perhaps a place to maintain kerosene lamps on the dwarf switch 
stands in the yard?
