I checked with Bill Schultz, and indeed the café coach was from the 350-352 series, assigned to the ARZ Brookfield-St. Joe run in May 1953. But all three of the cars continued in their green paint until retirement in the 1960s.

Subject: [CBQ] American Royal Zephyr and Cafe-Coach cars
As part of the initial American Royal Zephyr service from Chicago to
Kansas City-St. Joseph, the Brookfield to St. Joseph section is listed
as having a:
Cafe-59 seat Coach
Budd 52 seat Coach
Budd 6-6-4 Sleeper
Based on looking at the passenger car roster, it looks like the
Cafe-Coach would have to be from cars 350-352. They had table seating
for 6 and counter seating for 4.
According to Bill Glick's books, all three cars were rebuilt in 1937 to
Cafe-Coaches from Coach cars 6119 (built July 1922 by Pullman), 6126
(built August 1922 by Pullman) and 6136 (built August 1922).
Since this was a brand new train, I am wondering if the Cafe-Coach
assigned to ARZ was painted silver to try to match the stainless steel
cars (maybe even shadow-lined). Does anyone know?
Since the morning run was the only one in daylight, it appears photos of
the train are rather scarce.
All three cars survived into the mid-late 1960s, so perhaps there are
photos of the cars after the service on the ARZ ended.
