Charlie referred to the Baldwin Corporate History. The H&StL part starts at
https://babel.hathitrust.org/cgi/pt?id=mdp.39015021319341;view=1up;seq=247 covering the period from 1847 through 1883 (when the CB&Q bought a controlling interest) to 1901 when the property was officially transferred to the CB&Q. Equipment marked for H&StL
survived until 1908.
Another great on-line source is archive.org.

Joel-
If you do some searching on the internet Google Books, the HathiTrust, and the Linda Hall Library have books and railroad journals that will keep you busy reading about the H&StJ.
The W.W. Baldwin histories of the CB&Q also detail the H&St.J.
I’ve attached a pamphlet from the H&StJ as an example of some of the things you can find about the railroad on the net.
Happy hunting!!
