One minor correction regarding the Sandwich Fair -- it's not the oldest in the state. That honor goes to the Knox County Fair (in Knoxville, near Galesburg). They started in 1851 and had their 167th fair earlier this month. Many counties claim that their fairs are the oldest in Illinois, but I could not find one that has run longer.
