TELL TALE EXTRA: SEASONED EATINGS!

Last year Wyoming's own A.A. Krug and Berlin's own Inez Mischitz were thrown out of the most expensive hotel in St. Louis when they insulted Dave Francis and the general passenger agent of the Iron Mountain. Fraulein Mischitz turned to her English-to-German dictionary to see where they went wrong. Her first thought was ''Flucht nach vorn,'' but she could not find the proper translation. Finally, she found the following entry. ''Railway. Noun. The chief of many mechanical devices enabling us to get away from where we are to where we are no better off. For this purpose the railway is held in highest favor by the optimist, for it permits him to make the transit with great expedition.''


PUGET SOUND CLAM CHOWDER



INGREDIENTS
Two cups, six-and-one-half-ounces each of minced clams
One-and-one-quarter-inch cube salt pork, diced
One-half small onion, sliced
Two cups potatoes, peeled and cut in three-quarter-inch cubes
One-and-one-half teaspoons salt
One-eighth teaspoon pepper
Six tablespoons all-purpose flour
One-and-one-quarter cups boiling water
Two cups scalded milk
Three tablespoons butter
Four soda crackers
Cold milk


DIRECTIONS
Drain clams, reserving liquor.
In medium fry pan, fry salt pork.
Add onion, cook an additional five minutes until onion is tender.
Strain off fat.
Pour salt pork and onion into stew pot.
In separate pan, parboil potatoes in water to cover for five minutes, then drain.
On top of salt pork and onion in stew pot, layer half of the potatoes and half of the salt and pepper; dredge with two tablespoons of flour.
Repeat with other half of potatoes, salt and pepper, two more tablespoons of flour.
Add one-and-one-quarter cups boiling water.
Cook slowly for ten minutes, watching to keep from burning.
Add milk, clams and two tablespoons butter.
Cook three minutes, stirring occasionally.
Soak crackers in just enough milk to moisten.
Add crackers to chowder.
Heat reserved clam liquor to boiling.
In small pan melt one tablespoon butter, then stir in two tablespoons flour.
Slowly add hot clam liquor.
Add thickened clam liquor to chowder just before serving. Clam liquor is added last because it tends to cause the milk to separate.
Makes four servings.
