TELL TALE EXTRA: A WYPIGGY BIRTHDAY BREKKY!
Wyoming's own A.A. Krug turns eighty-two today. In his honor, Inez Mischitz has
suggested a birthday breakfast, and quips, ''Very tender and tasty. The batter
is thin.''
RICE and HAM GRIDDLE CAKES
INGREDIENTS
Two eggs
One cup cooked rice
Two cups milk
Three tablespoons melted butter
One cup all-purpose flour
Five teaspoons baking powder
One-half teaspoon salt
One cup cooked ham, diced
DIRECTIONS
In medium bowl, beat eggs; add cooked rice, milk, butter. Mix well.
Sift together flour, baking powder, salt.
Add to above mixture; beat until well blended.
Stir in diced ham.
Spoon batter onto a hot, greased griddle to form cakes of desired size.
Cook on one side until a number of bubbles appear.
Turn over and cook to a golden brown.
Serve hot with butter and syrup.
Makes fifteen griddle cakes, four inches in diameter.
