Dustin,

Stock shipments were of two main types:

1) Feeders-younger stock moving from the western high plains to feed lots and farms in the Midwest and East for fattening.

2) Fully developed animals moving to slaughter houses for processing.

There were other types of stock shipment like race horses, horses moving for slaughter(primarily St Louis bound), chickens (which I dont think lasted beyond the 30s) prime breeding stock,etc,etc,etc.
