On page 263 of Some Classic Trains is a poster, and on the bottom, it
reads "Pullman Dining Cars From Chicago to Omaha". The date given
is 1870s. An 1880s trade card shows an add for CB&Q Dining Cars.

The description of #1 is somewhat at odds with the news story Hol
posted (especially in colors but note that cars were painted often in
that era). Dubin indicates it was painted again in 1901 when Pullman
changed colors.

Interestingly, the book has a shot of WISCONSIN (and by extension,
NEBRASKA), as a Cafe-Parlor-Observation - doubtful then that this was
a rebuilt composite car. So in 2 years, the cars were replaced as
well as being repainted. replaced and/or renamed/numbered.

The Burlington Limited, to which the WISCONSIN mentioned above was
assigned, was the train discussed in February (from More Classic
Trains). Several cars are shown that were in both trains.

Keep in mind that Pullman also operated diners and coaches as well as
(and sometimes in addition to) building them for railroads.
